RESTART Sugar Detox, Day 6

Happy Martin Luther King, Jr. Day!

No school meant the whole family had the day off – oh, how we love 3 day weekends!  My husband was just remarking how 3 days really allows you to feel rested and productive at the same time.  Plenty of time for family fun, chores, and cooking scrumptious, sugar free meals!

I enjoyed my pint of lemon water, decaf coffee with coconut milk and a leftover Apple Chai Spice Scone before the rest of my household was up.  Sometimes gluten-free baked goods don’t hold up well over time.  The moisture from the nut flour can make them sticky and poorly textured. These day old scones were just right after 5 minutes in a 350 degree oven.

The scones are quite rich and filling, so we waited a while (over 2 hours!) for the remainder of our breakfast/brunch – scrambled eggs with avocado and salsa.  Pretty straightforward!Eggs

I set out on some errand running without my water bottle (Doh!), so quenched my thirst with a bottle of Lion Heart Kombucha instead.  If you’ve never tried kombucha, it’s a fermented tea beverage that is great tasting and good for you!  When clients lament giving up their favorite beer or wine during the detox, I suggest kombucha.  Lion Heart is local to Portland and they offer two flavors with 0 grams of sugar – Hero’s Blend and Lavender Lemonade.  (The label says low sugar because sugar is an important ingredient in kombucha, required for the fermentation.  But once the brewing is done, there’s no detectable sugar remaining – the microbes have gobbled it all up!) Dinner was another winner – Chicken Pot Pie from, you guessed it, The 21 Day Sugar Detox Cookbook!  I actually used turkey (roasted 2 turkey breasts at 350 degrees for about 45 minutes) because I had turkey bone broth in the freezer, leftover from Thanksgiving.  This is a great recipe for a weekend when you have more time to cook. It’s not difficult, just a bit time consuming.  But oh so worth it!  I was able to get 4 12-oz. pies plus two minis.
